  • Four large eggs
  • A teaspoon of vanilla extract

How to prepare

The dried fruits, juice and zest, sugar and butter need to be put in a pan and heated over medium flame. Once the mixture boils, reduce the heat and allow the mixture to simmer. Once the mixture has simmered, allow it to cool for a period of thirty minutes.

Line a cake tin and place a baking parchment as well as adding a double layer of newspaper on the outside. Add in the remaining ingredients to the fruit mixture made. Pour it into the tin that is prepared and level it. Allow the mixture to bake for a period of two hours.

Once the cake is prepared, poke holes in it and spoon in the alcohol you choose. Leave the cake for cooling off. You can peel off the parchment then and wrap with cling film. Put in one to two tablespoons of alcohol into the cake every fortnight. Let the cake dry during the final week and allow the surface to dry. Then add the icing to the cake.

The cake can be prepared a few weeks before Christmas. It will allow the flavors to sink in.
