Ingredients required

  • 1 cup of white sugar
  • ½ cup of white butter
  • 2 large eggs
  • 2 tsps. of vanilla extract
  • 1 3/4th tsp of baking powder
  • 1 and ½ cup of flour, all purpose

How to make?

A classic white cake is easy to make as well as easy to get started on as the ingredients are usually available in a kitchen from before. Preheat the oven to 175 degree Centigrade. Grease the pan and flour it as well. In a medium bowl, add in the butter and sugar and blend into a creamy texture. Beat the eggs separately in a bowl after adding in the vanilla extract. You can then add the eggs to the mixture of butter and sugar. To this mixture add in the flour with baking powder. Stir in milk, so that the batter becomes smooth. Pour in the batter in the pan prepared for the cake. Bake for a duration of 30 minutes or more till the cake is springy to touch. You could even spoon the batter into muffin pan which is lined with paper liners.

Here is a variation of the plain, white cake that combines the flavors of lemon as a lemon filling.

Ingredients required

  • 2 cups of all purpose flour
  • 1 and ½ cup of white sugar
  • ½ cup of shortening
  • 1 tsp of salt
  • 2/3rd cup of milk
  • 3 and ½ tsp of baking powder
  • ½ cup of milk
  • 4 eggs, whites only

For the lemon filling

  • 3/4th cup of white sugar
  • 1 tsp of vanilla extract
  • 2 tbsp of flour
  • 2 tbsp of grated zest of orange
  • ½ cup orange juice
  • ½ lemon, juice extracted
  • 1 cup of whipped cream
  • 1 egg

Preheat the oven to 375 degrees F. Grease two layer pans of 9 inches in diameter. In a mixing bowl, add the flour, sugar, shortening, milk and salt as specified for the cake. Beat the egg whites separately along with vanilla essence and milk. Pour in the batter in the pans that prepare for baking. Bake the cake batter for 30 minutes or more till they are done. To make the lemon filling, put in the sugar, flour, lemon and orange juice as well as egg and beat well. Cook over medium heat till the mixture thickens. Remove from heat and cool.
