What is the difference between candied yams and sweet potatoes?
The skin of a yam (left) looks kind of like tree bark, while a sweet potato (right) is more reddish-brown. Real yams are entirely different root vegetables that are more like yucca in texture and flavor. To make life even more complicated, there are a handful of varieties of sweet potatoes: orange, white, and purple.
How do you make candied yams from scratch?
- Peel the sweet potatoes and cut them into slices.
- Melt the butter in a heavy skillet and add the sliced sweet potatoes.
- Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are “candied“.
Why are my candied yams runny?
What should I do if my candied yams glaze is too runny? You may add some cornstarch and water to thicken up the glaze. I would recommend mixing 2 tsp cornstarch and 2 tsp water and then stirring it into the glaze. Although, if you cook the yams uncovered in the oven, the glaze should thicken nicely without cornstarch.
How do you make candied yams on Food Network?
Place cut yams in deep baking dish. Add sugar, pineapple juice, orange juice, and water. Sprinkle ground cinnamon over top of yams. Cover yams and bake in 400 degree preheated oven for approximately 40-50 minutes or until yams are fork-tender.
