Ingredients to use

  • 2 cups of flour
  • 2 tsp of baking powder
  • 1 tsp of salt
  • 1 and ½ tsp of baking soda
  • 2 tsp. of ground cinnamon
  • 4 eggs
  • 2 cups of sugar
  • 1 and ½ cups of oil
  • 2 cups of grated, raw carrots
  • 1 can or 8 ounces of pineapple, crushed and in juice
  • Half a cup of chopped nuts

For the cream cheese frosting

  • Half a cup of butter
  • 8 ounces of cream cheese
  • 1 tsp of vanilla
  • 1 lbs of confectioner’s sugar

How to make?

Begin by preheating the oven to 350 degree Fahrenheit. Sift the flour with baking powder, salt and soda and keep aside. Take a mixing bowl and add in sugar and eggs, beat finely till a smooth and whitish mixture is formed. Allow the sugar to dissolve completely. This will happen when the mixture is made to stand for ten minutes. Meanwhile, take another bowl and mix in ingredients like nuts, drained pineapple slices and carrots. Add to the flour mixture. You can then add in the egg and sugar mixture, adding milk as and when required to make a smooth batter. Meanwhile, grease two cake pans, one smaller than the other. Bake each cake tin for about thirty five to forty minutes or till the baking is done uniformly. Cool the cakes and turn them onto wire racks.

While the cakes are cooking, prepare the frosting. This can be done by combining the vanilla, cream cheese, butter and sugar. Blend with a blender till it is well blended. You can add in milk to adjust the consistency of the frosting. Once this is done, add the frosting as a layer between the two cakes. You could also add to the frosting on top. Once the cake is cooled, refrigerate the same. This can be consumed with pudding and other dessert sauces.
