Best Vegetarian Burger Recipe

INGREDIENTS

  • 8 ounce of mushrooms
  • 1 carrot
  • 1 cup of broccoli florets
  • ¼ onion
  • 2 cloves of garlic
  • 2 tablespoons of vegetable oil and more for cooking
  • 1 teaspoon of smoked paprika
  • Fine salt
  • 1 teaspoon chili powder
  • ¼ teaspoon of ground black pepper
  • 1/3 cup of halved walnuts
  • 1 can of black beans
  • 2 cups of packed spinach
  • Fresh parsley, chives, and cilantro (optional)
  • 2 eggs
  • ½ cup panko breadcrumbs
  • 1 tablespoon tomato puree
  • ¾ cup of brown rice, cooked
  • Lettuce tomato
  • Bread rolls
  • Cheese
  • Preferred burger sauce

DIRECTIONS

Preparing Vegetables and Beans

  1. Heat the oven at 400 Fahrenheit. Line it with two rim baking sheets with the help of foil, silicone baking mats, or parchment paper. Use a damp towel to clean the mushroom. Chop it roughly along with onion, broccoli, and carrot. Transfer the vegetables into a food processor. Add olive oil, garlic, chili powder, smoked paprika, and salt and pepper to taste. Ground the mixture coarsely.
  2. Take out the vegetables and spread it on a lined baking sheet. Thinly layer the vegetables and cover it with a baking sheet. Roast it for fifteen minutes. Spread the beans onto a baking sheet in a layer.
  3. Take out the vegetables and transfer them along with the beans to the oven. Roast it till the beans begin splitting and appear dry. Allow it to cool.

Making the Burger Mix

  1. Take the food processor bowl and add the walnut, fresh herbs, and spinach. Blend it till it is the size of a breadcrumb. Take the beans and blend it again until it is coarse with large crumbs. Add the egg, roasted veggies, and the panko breadcrumbs with tomato puree. Blend everything till it mixed properly. Take out the mixture and fold it with rice. Refrigerate the mix.

Cooking the Burger

  1. Divide the burger mix into 8 portions. Make ½ patties from each portion. Heat a skillet on medium to low heat and add oil. Place the patties. Cook until the patties are firm and brown on each side. Be careful when you flip the burger.
  2. Place the patty in between a bread roll; top it with cheese and your preferred burger sauce.

NOTES – Beans other than black beans can also work for this recipe.
