Healthy Chicken Vegetable Soup Recipe

INGREDIENTS

  • 2 cups of freshly chopped onion
  • 1 red and 1 green bell pepper finely chopped
  • 2 cups of celery
  • 1 and 1/2 cups of diced carrots
  • 6 ounces of spinach
  • 5 cups of chicken stock
  • 2 cups of shredded chicken
  • 1 cup of egg noodles
  • 2 cloves of garlic
  • 1/4 teaspoon of hot pepper sauce
  • 1/4 teaspoon of soy sauce
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

DIRECTIONS

  1. Begin with oil in a large pot. The preparation is direct and without hassle. Turn the gas to medium heat, place a large soup pot and pour the vegetable oil. Allow it to get hot. Now, add the garlic cloves, onion, celery, chopped red and green bell pepper, and the carrots. You can always finely chop the carrots too to resemble the other veggies.
  2. Now it’s time to saute them. Saute the onions till they turn translucent and the veggies are also tossed properly through the oil. Now, add stock broth. Just to mention that buying stock broth from the grocery can reduce the prep time a lot. After adding the stock, add pepper and salt to taste. Finally, add soy and hot sauce. This is the main taste of the soup. The amount of broth adds the liquid to the soup.
  3. Now, simmer the soup. Increase the heat a little till it starts to simmer. Now, be careful to reduce the heat, but don’t cover the pot and allow the soup to further simmer for about 40 minutes. This will allow the veggies and the broth to blend nicely. You can taste the soup to find a nice blend of all the ingredients when it has cooked. The veggies will get tender by now.

  1. Now cook for few more minutes. Add the spinach now. You have to cover the pot now so that the spinach will blend soon. Keep stirring the soup slowly and let everything mix well. Continue cooking for like five more minutes. Now, add the shredded chicken and simmer till the chicken is cooked. Keep adding broth if the soup it dries up.
  2. Keep the soup quantity checked. Add the chicken stock if it feels reduced. The heat is still at a low. Allow it to simmer for a half a minute, mix and put the flame off. You can cover the soup pot and let it be. Finally, serve in bowls.

NOTES – Buying pre-chopped veggies from your grocery store can save you more prep time. There is not much difference in the results though.
