A vegetable soup recipe with Indian seasonings
For those who are suffering from a common cold it would be beneficial to opt for a soup that is made with Indian spices. You could opt for butternut squash and carrots which are winter vegetables and add in onions to them along with Indian spices.
- Pinch of cumin, cayenne pepper, clove, turmeric, garlic, ginger, coriander and cumin powder
- A medium onion
- Two small carrots
- A medium sized butternut squash
Method of preparation
Take a heavy bottomed pot and add a dash of olive oil to it. Add the chopped onion, carrots and squash and sauté with the spices and seasoning. After that add on vegetable or chicken stock and allow the concoction to simmer for 30 to 45 minutes. Once the vegetables are cooked, remove from heat and place in a blender. After blending the soup, put it back on the heat to make it smooth before serving.
