Method of preparation

Take a large bowl and place the apples and cover it with boiling water. You can do it in batches depending on the size of the bowl. By doing so, you can get rid of the waxy coat and also caramel can get stuck with ease. Thereafter, dry it thoroughly and twist off all stalks. Insert a lolly stick or a wooden skewer towards the stalk end of every apple.

Place a baking parchment sheet and arrange the apples on it near to the stovetop. Once done, you can add sugar in a pan with 100 ml of water and cook it on medium heat for about 5 minutes. The sugar has to get dissolved completely and then add in the syrup and vinegar. In the pan, you can place a sugar thermometer and bring it to boil at 1500 C. Do not fret if you don’t have a thermometer as you can monitor the toffee simply by pouring a small amount of it in a bowl of chilled water. If it gets hard instantly and goes brittle and breaks easily when removed, then the temperature is right. If not, then allow it to boil for some more time.

Carefully dip and immediately twist every apple in the toffee and allow the excess toffee to drip away. Thereafter, place it on the parchment to ensure it gets hardened. If the need arises, you may have to reheat the toffee when you see the temperature dropping and beginning to get thicker. Allow the toffee to cool down before you offer it to others.
