Now add the porcini liquid, 3/4 cup of basmati rice, chopped porcini mushrooms and bring to a boil. Reduce the heat to low and simmer for 30 minutes or till the rice gets cooked. Now add the cooked chicken, 2 cups thawed frozen green peas and thyme. Cook for another 5-8 minutes and serve hot.
Roast Chicken with Red Potatoes and Squash
This is a healthy meal on a budget with very few ingredients. Take chicken fillet and add 1½ tbsp garlic, ½ tsp salt, 1/2 tsp pepper and ½ tsp dried sage. Place the chicken on a baking tray coated with cooking spray. In a bowl, mix 12 ounces of potatoes cut into wedges, 1 1/2 cups cubed butternut squash, 1 tbsp garlic, 1/4 tsp pepper and 1/2 tsp salt. Egg and Bacon Tarts
