Wholesome potato soup recipe

This is a soup that will be tasty and nutritious for the whole family. For kids you can top it with cheese and bacon strips and accompany the same with garlic bread to make a complete meal.

Ingredients to use

  • Four red potatoes
  • Two teaspoons of olive oil
  • Half a cup of chopped onion
  • One and one fourth cup of chicken broth
  • Three tablespoons of flour
  • Two cups of low fat milk
  • One fourth cup of sour cream
  • Half a teaspoon of salt
  • One fourth teaspoon of black pepper
  • Three bacon slices that are halved
  • One and half ounces of cheddar cheese
  • Four teaspoons of sliced green onions

How to make

You can make the potatoes tender by piercing them with a fork and then heating them in the microwave on high heat for about thirteen minutes. You need to cut them up and cool them down. Meanwhile, heat the oil in a saucepan and sauté the onions in it. Add in the broth and the flour as well as milk. Bring the mixture to a boil and then stir in the sour cream along with pepper and salt. Meanwhile, microwave the bacon slices on high and crumble the bacon. The potatoes need to be skinned and mashed to add to the soup. You can then top the soup with bacon, green onions and cheese and serve with garlic bread on the side.

  • Six ounces of turkey sausage
  • Two cups of chopped onion
  • One cup of chopped green bell peppers
  • Eight garlic cloves
  • A pound of sirloin
  • One chopped jalapeno pepper
  • Two tablespoons of chili powder
  • Two tablespoons of brown sugar
  • A tablespoon of cumin powder, tomato paste and dried oregano
  • Pepper and salt to taste
  • Two bay leaves
  • One and one fourth cup of red fruity wine
  • Two whole tomatoes
  • Two cans of kidney beans
  • Half a cup of cheddar cheese, reduced fat

How to prepare

Once all the ingredients are ready, you need to get a large Dutch oven heated to medium heat. The casings need to be removed from the sausages. Add in the onion, the sausages as well as the other ingredients and cook for about eight minutes. Once the sausage as well as the beef has browned you are ready to move onto the next step. You need to add in the next items like the chili powder, bay leaves and the remaining ingredients. You need to cook for about one minute after which you can add in the kidney beans, the tomatoes and wine. Once the mixture comes to a boil, cover and reduce the heat.
