INGREDIENTS

  • 1 tablespoon of olive oil or vegetable oil, whichever is available
  • 7 sliced mushrooms
  • 1 chopped onion
  • 5 chopped cloves of garlic
  • 2 boneless cut into small portions chicken thighs
  • Salt and ground pepper to taste
  • 1 teaspoon of paprika
  • 2 tablespoon of lemon juice
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of freshly chopped parsley
  • 1 cup of cooked brown rice

This easy 30-minute turmeric chicken formula will be one that you keep on your feast list of options rotation weekly. Obsessed is one way to describe this recipe but most importantly, easy.

DIRECTIONS

  1. Take a skillet and heat it on a medium-low flame. Add oil, vegetable or olive whichever is available. Once the oil is heated, add the chopped garlic and onion, let them cook until raw smell goes away.
  2. Let the onions soften, then add the mushrooms and let it cook. Make sure, they don’t burn so keep stirring them.
  3. Add the chicken portions and some salt and pepper according to your taste preference. Cook and stir until the chicken is cooked, for about 15 minutes.

  1. Add some paprika and the turmeric into the skillet. Stir till it’s evenly coated. Add the lemon juice in the mixture and stir.
  2. Add some parsley. Add rice and let it mix till 5 to 7 minutes, stir thoroughly.

It takes no time to make it and it is one of our favorite dishes to make now. I make it at least once a week because of how quickly it comes together (yes, really, 30 minutes!) which is super helpful for me during weeknights after work.

TIPS   

  • In case you’re using frozen mushroom, make sure you thaw the mushroom perfectly and drain the extra water.
  • To check if the chicken is cooked, check if any portion is pink. Pink in the chicken denotes rawness.
  • Parsley is a substitute to Italian seasoning.
